Vinification
The harvested grapes are immediately softly pressed and the must obtained, without the addition of selected yeasts, carries out the alcoholic fermentation at 13°/15°C with frequent battonage. Malolactic fermentation is not carried out. In spring the wine is clarified and filtered and then follows the second fermentation. After about 44 months on the lees, the disgorgement is made and the same wine is used for the dosage. Refinement after disgorgement is guaranteed for at least 3 months before being marketed

Sensory notes
Extremely complex rosé with hints of peach, cherries and pastry. On the palate the acidity stands out which enhances the flavor and personality of this unique wine of its kind.
