Harvest: 50% of the grapes are harvested in the last week of August/first week of September and 50% in the last ten days of September/first week of October

Vinification and ageing
The first crop is a late green crop. The alcoholic fermentation begins without the addition of selected yeasts and proceeds at 13°/15°C. The second harvest is a saignée made on the same day as the harvest. The must is then combined with that of the first harvest and fermentation proceeds at 13°/15°C.
