Vinification and ageing
After having carried out a careful selection of the grapes in the vineyard, the destemming with soft pressing follows and, without the addition of selected yeasts, the alcoholic fermentation takes place between 28°C and 30°C. The entire fermentation/maceration process takes place in steel tanks for about 35 days with manual punching down and pumping over. In December, the new wine is decanted into the 6.5hl cement egg where the malolactic fermentation takes place. After 12 months of maturation, bottling follows. Aging is guaranteed for at least 8 months before being marketed.
